I was thrilled to read there was an earl gray ice cream recipe, my favorite tea. Can anyone please tell me how I can incorporate shortbread pieces into the earl gray recipe without them going soggy? Thank you.

You could try coating chopped shortbread with egg white and a small amount of sugar and then toasting in the oven. This should create a coating around the shortbread and make them crisp. Add them to the ice cream once you’ve churned it in the machine but before you put it in the freezer to harden.
