This is the Excel spreadsheet that I created, and continue to use, to formulate my commercial ice cream recipes for my small business, Rogue Artisan Ice Cream.

How does the subscription work?
Step 1 - Microsoft Outlook (formerly hotmail) email is required for access
This process is a little convoluted so please bear with me as it’s the best one that I’ve found so far. Because the Excel spreadsheet is hosted on Microsoft Sharepoint, you will need to have a Microsoft outlook, or hotmail as it was formerly known, email address to gain access. If you don’t already have an outlook or hotmail email address , you can quickly sign up for a free one from Microsoft here.
Step 2 - email access link
If your PayPal email address used to sign up for the monthly subscription is an outlook or hotmail one, I will send the access link via email to this address within 24 hours of your sign-up, usually sooner. This link sometimes goes into your junk folder so please check that.
If the email address you use for PayPal isn’t an outlook or Hotmail one, you can still sign-up but then after you have done so, please create a free outlook or hotmail email address at Microsoft, or by clicking here. Once you have your new outlook or hotmail email address, please email me at ruben@icecreamscience.com from the same email address you used for your PayPal subscription. In the body of this email, please include your new outlook or hotmail email address. I will then send you the spreadsheet access email to this new outlook or hotmail address.
I will email PDF instructions on how to use the spreadsheet along with the access link. Video instructions coming shortly.
What can the spreadsheet actually do?
This spreadsheet is designed for commercial use and most probably overkill for home cooks. It allows you to formulate a recipe of any batch size using a combination of sweeteners, stabilisers, emulsifiers, and dairy. It also calculates the sweetness profile, freezing point, and cost of the batch. I’m working on a video introduction, which I will post soon.
Unlimited monthly access
You can use the access link I email you to access the spreadsheet anytime through Excel online. Each time you use the spreadsheet, it will automatically save your changes so that you can pick up where you left off the next time you sign in. No other user will have access to, or be able to see, your recipes.
You will also be able to print a PDF version of your recipe. It isn’t possible to download a copy of the spreadsheet to use on Excel desktop.
I will start with an initial dairy base spreadsheet. I will then add a chocolate base spreadsheet, a cheese base spreadsheet, a lotus biscoff base spreadsheet, a fruit base spreadsheet, and a nut base spreadsheet as and when there is demand for these.
Can I request a specific ingredient be added to the spreadsheet?
Yes. If there is an ingredient that you would like to use and that I haven’t included in the spreadsheet, for example glucose powder, please get in touch and I’ll add it to the spreadsheet.
Cancelling
You can cancel your subscription anytime through Paypal. Please note that access to the spreadsheet will be lost as soon as I receive notification from Paypal of your cancellation.
